Officially I suppose you’d call these lactation cookies but i think nursing cookie sounds better. These really work. I found that only a couple of cookies happily munch during or after each feed seriously boosted my supply soo much that my breast pads were soaked. They really came in handy when I needed to be away from my baby. Eating the cookies and expressing help to maintain my supply.
I’ve squeezed as many galactagogues into here as possible whilst making them still taste good – which is tricky!!I’m going to work on converting these to coconut or almond flour if i can.
This recipe makes alot of cookies )about 30) but i found it difficult to get time to make them so when i did have a bit of spare time i baked in bulk. I was eating two cookies at each feed and one or two more whenever i was peckish(!) so I could get through 30 in two or three days without much trouble. Little babies feed ALOT!
2 cups plain flour
1 tsp baking powder
1&1/4 cups warm coconut oil
1 cup brown sugar
4 tablespoons Flaxseed Meal
2 large eggs
3/4 cup of water (you might want to add more later)
1.5 tablespoons vanilla extract
2.5 tablespoons of brewers yeast (the most important ingredient) as you get braver you can gradually increase this.
1 teaspoon salt
3 cups oats
1/2 cup desiccated coconut
1/2 cup of your fave biscuit ingredients (i like sultanas or cherries)
Preheat your oven to 170degrees
In a small bowl combine the flaxseed and water
While that is doing its thing cream together the coconut oil and sugar in a separate bowl then add the egg and vanilla and finally the flaxseed mix.
Add all the dry ingredients except the oats and your favourite additions. Give it all a good stir. If its too stiff to mix add another 1/4cup of water bit by bit. Then mix in the oats and your additional ingredient/s.
Blob little mounds of the mixture on to a baking sheet lined with baking paper or roll it into balls first and then flatten a bit. Its ok for the mix to be quite stiff. You’ll just get squidgey centres.
Stick them in the oven and bake for about 10-12 minutes. Its best of they’re still a bit soft in the middle so be careful not to over cook them.
p.s You may or may not want to tell Dads that its ok to eat the cookies. They won’t cause them to start making milk!!
